Fall Ice Cream Sandwich


These turned out sooo yummy and the good news is, although they have quite a bit to them, they are pretty quick and easy.  This is a dessert you can do ahead if you need to.  In my neck of the woods, it is still pretty warm during the fall, so I thought I'd make a new fall dessert, that can still be yummy when it's warm.

I grew up having peanut butter ice cream with my mom as a special treat occasionally.  It is pretty addicting, so steer clear if you need!  I definitely got some girlfriends addicted in college. :)

Chocolate Peanut Butter Ice Cream Sandwiches
Servings: 6 sandwiches

Cookie:
1 package Devils Food Cake mix WITH PUDDING (in the mix)
2 eggs
1/2c oil
Peanut Butter M&Ms for the top

Pre-heat oven to 350 degrees.  Mix all ingredients (except m&ms) until combined.  Form into small cookie balls and place on a non-stick backing sheet.  Press M&Ms into top of the cookie.  I chose fall colors to accent the season.  Bake for 8mins.

Let cookies cool completely.  I chose to freeze the cookies, so that they would freeze even quicker when I added the ice cream to them.

Ice Cream:
4 scoops of your favorite vanilla ice cream
3 Tbsp smooth peanut butter (I use Jiff)

Let the ice cream sit for a couple minutes to soften while you lay out the cookies.  Begin stirring the peanut butter into the ice cream until smooth and completely combined. Put a layer of ice cream onto the cookie and add a top cookie.  Once all the sandwiches are assembled.  Place in the freezer for approx. 2 hours to harden.

Overall, pretty simple and easy to do in advance!
